I have done 21 quarts of tomatoes in less than a week. This last batch was a chile sauce made from Mrs. Wagemans seasoning. I've also done 24 trays in the dehydrator. The rest of the garden tomatoes will be used for fresh salsa (YUM), salads, and sandwiches because I'm tired of canning. The garden will probably freeze Wednesday night and I will be free of the guilt of not preserving more tomatoes. Maybe I'll dehydrate a few pears tomorrow. Or maybe I will do a little of my real job.... quilting.
